Can I have s’more please?

Getting toward the end of the week is like finding a $50 bill on the side of the street… and keeping it. Wednesday started off with rain which meant a missed run in the morning which I was sadly okay with. This is how I know that I am not to the point where I want to be yet because I am a little happy when I realize it is raining and I can’t go outside to run. So with an extra 45 minutes of sleep I finally made it out of bed and into work right on time. Casey and I dropped Brody off on the way to work at doggy daycare for his “summer pawty”. They really decorated the place and made it look really nice for those dogs! Sometimes I want Casey to leave me there with him because that life seems like the good life.

Work went by pretty fast in the morning and I was pretty glad when lunch time rolled around. We were having a working lunch as a team so we had it catered to make our lives easier. We decided on a fajita bar which consisted of some chipotle chicken, pork of some sort, veggies, salsa, sour cream, and cheese. There was no guac delivered so I was more than disappointed when I realized that but still ate it on half a wrap because the ones they brought to us were massive and way more than I needed. It was just “ok” and I could have found better I’m sure but it was just lunch and I made do. DINNER was going to be the fun part anyway!

The beginning of a great night

So for dinner I had Casey and Jen over to enjoy some girl time. We decided to do a “pizza” night where we made our own pizzas and enjoyed some homemade guacamole made by Casey and Jen brought over some candy to enjoy s’mores on the stove for dessert. I’m sure I have said this before but I am OBSESSED with Casey’s guacamole so I pretty much ate it all before Jen even got to my house.. oops! Anyway we decided on 2 different pizzas.

Pizza 1

This one was a normal pizza with a Pillsbury crust, pizza sauce (a little over 1 cup), turkey pepperoni, green peppers, and fat free mozzarella cheese. It was DELICIOUS and it cooked up really nicely on that pizza stone we used. Tim’s mom had this nice fancy Pampered Chef pizza stone that she never used and was kind enough to give to me and I try to use it all of the time. Even when I buy frozen pizzas (Sam’s club has REALLY good ones) I cook it up on the stone because the crust gets nice and crunchy but not burnt. It is just really good.

This was the second one and this one was a different take on pizza. We did olive oil, salt, peppers, and garlic powder as the base. Then we layered on the roma tomatoes and spinach. We topped half of it with fat free feta cheese and the other half with fat free mozzarella. This is probably my favorite type of pizza since I am not a HUGE fan of red sauce. Now, the crust wasn’t as delicious since I only have one pizza stone but it still tasted great! All 3 of us enjoyed at least 1 slice of each. I enjoyed 2 slices of each haha.

With pizza that tasty we needed some really good drinks to go along with it! Casey had brought over the Skinny Girl Sangria so we finished that off first. Poor Jen only got about half a glass but that is what she gets for showing up late. I really enjoyed this Sangria. I am usually a fan of Sangria anyway but typically those made of red wine. This one was made with white wine but was just really refreshing. I think it is better than the Skinny Girl margaritas and I am looking forward to trying to mojito one that is out now too.  What a great concept- drinks that aren’t full of calories. See- Jen and Casey both think it is great!

Brody came over for a visit

We wrapped up pizza night with the s’mores. Just like last night they were really tasty. Since I never had a gas stove growing up I had no idea about this amazing idea so I think it will probably happen a lot to my kids when they grow up. I think it is so fun! Tim had come home at this point so he enjoyed a s’more with a Reese cup on it as did I. Casey used regular Hershey’s chocolate on hers.

Overall, no complaints from me! It was a really fun night with a lot of great food and drinks but more importantly great company. It is so nice to remind yourself of how great your friends are sometimes. It is so easy to forget to say thank you and I appreciate you so we decided to try to go girls night once a month or so as a friendly reminder of how much we love each other!

What is your favorite activity to do with your friends?

I love game nights! Call me a nerd or whatever you want but I just love to sit back have a few drinks and play games. My favorite games to play are Scene It, Shout Out Loud, and cards. I don’t know how to play very many card games but I love go fish, Euchre, and I have a recent obsession with black jack. Oooo and I do love Uno and Phase 10.
