So this is probably not new news to anyone but yea I love food! So I thought I would post some of my tasty food choices over the last week or so! I made stuffed mushrooms, a wonderful breakfast wrap, kale and white bean soup for dinner, and even some overnight oats.
On the weekends Tim and I like to make breakfast! Since we are so busy getting ready for work in the AM it’s tough to spend that time together and get a quality breakfast meal so we take advantage of the time we have on the weekends.
Most of the time it looks like this…
And consists of these items…
- Scrambled eggs (usually about 4 eggs for Tim and I)
- Green peppers
- Spinach (sometimes just for me)
- Tomatoes (always just for me)
- Low Fat or Fat Free cheese (varies by the cheese in our fridge)
- Sour Cream and Salsa (just me for the salsa) on the side
All on a FLAT OUT which can be used for so many other purposes than a breakfast wrap but so delicious! We almost always have regular low carb tortilla wraps (which is what I had to use in the picture above) but when I can I find the FLAT OUT option the best!
I heard about overnight oats from my friend Mary over at Fervent Foodie a while ago and Tim and I were going nuts making these things for months but they started to get a little old so we went on a overnight oats sabbatical for a while.
These oats were made a little different than I had ever made them before BUT they were pretty delicious
- 1 cup Oats
- 1 cup soy egg nog
- Handful of chia seeds
- Dash (ok a really good dash) of nutmeg
You just make these the night before and then let them sit in the fridge overnight. Then they are ready to rock and roll the next morning and you can take them to work or wherever you are going!
So I have been trying to incorporate kale into my juicing but the taste and the strong smell of that stuff is something else. So by some random stroke of luck I ran into my friend Michelle at work who had some kale and white bean soup. This was delicious.
But it made a heck of a lot!
I slightly followed a recipe that I found online but this is pretty much what I came up with
- A TON of kale
- Chicken bouillon cubes (2)
- White Northern Beans
I just cooked it all up in a HUGE pot and ate it for weeks… I shared one bowl with my parents too and they seemed to enjoy it!
My mom makes stuffed mushrooms a lot and I love them but Tim isn’t a big fan and well they just aren’t something I have made a whole lot of. So I decided to give it a try!
I cooked up the insides of the mushrooms and put this in it…
- Ground turkey
- Turkey sausage
- Green Peppers
- Chili Powder
- Fat Free Cheddar Cheese
Cook all of that goodness in a skillet and then put them in hollowed out mushrooms that have some olive oil on them to ensure they don’t burn to a crisp in the oven. If you cook at 350 degrees for 20 minutes they are DELICIOUS!
I cooked up some orzo for Tim and put aside the insides in a separate bowl so that he didn’t have to eat the mushroom… I knew he would be happy about that!
